Alfajores are often enrobed in a thin, perfectly tempered shell of real Couverture Chocolate, either bittersweet or white, or alternatively in sugar icing or meringue.
What is Dulce de Leche?
Dulce de Leche is a confection obtained from the skillful combination of milk, sugar, pure Madagascar vanilla and a touch of sea salt, heated and stirred for several hours on an artisan’s copper pot, until the proper consistency is reached, resulting in a rich and smooth caramel-like spread.
